help with midi keyboard on garageband?

i use garageband and i recently bought an edirol MIDI keyboard controller (PCR-M80).

i can change the sound on garageband to make it paino, synth, guitar, etc...
but im not sure how to adjust it on the actual keyboard because you can (it has all the knobs and sliders and whatever they are actually called to adjust echo and averything)!
would anyone be able to tell me how i adjjust it from the kayboard? for garageband
